Origin: Premiers Crus from the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs.
Fermentations & Ageing
Stainless steel first: alcoholic fermentation, then malolactic, clean and unhurried.
+ Then the secret. A quarter of the blend, the reserve wines, goes into our old Allier Foudres, large oak barrels, some of them well over a century old, where it sleeps a full year until wood and wine find a common voice.
+ After that, about six years of patience in the bottle, on the lees, in the silence of our chalk cellars.
+ And at least three months' rest after disgorgement before the bottle may leave.

Production timeline
Our Brut Réserve is characterised by a specific ageing of the still wines and by the very long cellar time then attributed to those bottles.
Main harvest
Year's wines: a first blend only made out of wines from the last harvest is done. One part is used to compose 75% of Brut Réserve, the other part is sent for ageing in oak "Foudres".
Reserve wines
Foudres: made out of oak from l'Allier mountains; capacity varies between 25 hL and 40 hL; some are 50 to 100 years old. We age there for one year the wines from the first blend, reunited with a portion of wines previously aged in Foudres. These 25% complete the final blend.

A fine dining Champagne, smooth and lively, with a powerful and fresh structure.

8 to 10 °C (46 to 50 °F)
Colour
Shining honey yellow, with fine highlights
Nose
Pleasing. Strength and freshness; pastry and brioche notes, yellow fruits (apricot); hint of caramel and spices.
Taste
Smooth, lively attack carried by clear acidity. Mid-palate brings ripe yellow fruits in the manner of apricot pie, toasted brioche and a fig note. The finish turns floral and faintly vegetal, fresh and persistent.

Fine cuisine pairings

Fine dining Champagne. With a Sunday roast, grilled sea bass with summer veggies, creamy veal rib steak and mushrooms.

Initial closure: crown cap.
Shipping & cellaring
Final closure (after disgorgement): traditional cork.
Post-shipment cellaring: ready to drink, can be kept in cellar conditions for up to 5 years.
