Stainless steel first, clean and clear: alcoholic fermentation, malolactic fermentation. Two thirds of the cuvée, from the year.

Production timeline
Making. A wine without dosage is a portrait with no make-up. Every line shows, every shadow stays honest. Once you forbid sugar as a final correction, everything before it must be right, the parcel, the harvest, the fermentation, the ageing, the long rest on the lees. We call it Patience & Freshness. It is more than a phrase, it is a method.
Main harvest
Zero Dosage. At Gardet we count on the reserve wines' roundness and cellar time to guarantee an optimal balance between the sharpness caused by the absence of sugar, and the smoothness from maturing a blend of carefully selected wines.
Reserve wines
Blend. One third of the cuvée comes from reserve wines of several harvests, raised in oak Foudres. This Foudre ageing is not aromatic, the oak is old and neutral, but structural: it gives the cuvée the mouthfeel and the roundness a wine needs once the dosage is gone.

Pale gold with a silver sparkle, the colour of a cuvée that hides nothing
Nose
Very delicate on opening. White flowers and citrus first, with a fine touch of spice. Behind them, yellow stone fruit, then the brioche and vanilla drawn from long lees ageing and the Foudre-raised share of the blend.
Taste
On the palate the freshness leads, unveiled, with no sweetness to flatter it. Stone fruit follows, a trace of vanilla and brioche from the years on the lees, a touch of spice through the middle. The finish is mineral and saline, pink grapefruit and chalk, long and honest.
Fine cuisine pairings
Pairs with scallop carpaccio and truffle shavings, with crustaceans, with lobster. At the close of a meal, it also holds its own against an old Parmesan or a Comté.
