Production timeline
A non-vintage is not a compromise: it is a stylistic choice. The 70/30 ratio between the year's wines and reserve wines is the House's constant formula. The reserve wines, kept in stainless steel, are reassessed each year; at blending, we keep the lots that carry the Gardet continuity forward.
Main harvest
Main harvest, about 70% of the blend: the most recent crop, generally around four years old at release. It brings the tension, the primary fruit, the acid freshness that sets a non-vintage Brut apart from a single vintage.
Reserve wines
Reserve wines, about 30% of the blend: mainly from the three years preceding the base harvest, some lots older. They carry the House identity: the mineral line, the brioche notes of long ageing, the roundness on the palate.

A reference point for anyone placing the Brut style of Champagne. The balance between the year's wines and reserve wines sets the benchmark: Pinot Noir tension, Meunier roundness, the Chardonnay's mineral line.

Nose
With character, open. Hints of chalk, fruit, and toasted notes.
Taste
Expressive attack, dominant freshness carried by Pinot Noir acidity. Mid-palate, white stone fruit, Meunier velvet, Pinot Noir directness. Mineral, chalky finish; the 8 g/L dosage holds the sugar-acid balance; long persistence.

Fine cuisine pairings

Three ways to serve it. At the aperitif, with a few gougères and prawns seared on the plancha. At Sunday brunch, with scrambled eggs. Or on its own, late in the afternoon, for the pleasure of it.
