Origin: Premiers Crus from Montagne de Reims, Vallée de la Marne & Côte des Blancs.
Fermentations & Ageing
Stainless steel first: alcoholic fermentation, then malolactic, clean and unhurried.
+ Then the secret. A quarter of the blend, the reserve wines, goes into our old Allier Foudres, large oak barrels, some of them well over a century old, where it sleeps a full year until wood and wine find a common voice.
+ After that, about six years of patience in the bottle, on the lees, in the silence of our chalk cellars.
+ And at least three months' rest after disgorgement before the bottle may leave.

Production timeline
Some Champagne Houses are in a hurry. We are not. Our Brut Réserve earns its name for two reasons: the particular Foudre ageing of the still wines, and the genuinely long cellar time then given to those bottles. Both are an investment in character, never a Champagne made in haste.
Main harvest
Three quarters of this cuvée come from the most recent harvest, honest young wines carefully assembled. One part goes straight into the blend. Another waits, ageing in the Foudres until it has found its own voice.
Reserve wines
Foudres ageing: oak barrels from l'Allier, capacity between 25 hL and 40 hL, some 50 to 100 years old. Here the set-aside wines of the first blend are raised for one year, joined by a portion of reserve wines from prior years. This matured quarter (25%) completes the final blend and gives it depth.

Tasting
A fine dining Champagne, smooth and lively, with the depth of a House that has known what patience means since 1895. The structure stays powerful, the freshness intact, and the long years on the lees leave their mark without ever weighing it down.

Shining honey yellow, the colour of a ripe summer memory
Nose
Pleasing. Strength and freshness; pastry and brioche notes, yellow fruits (apricot); hint of caramel and spices.
Taste
Smooth and lively. Aromas of ripe yellow fruits (apricot pie), toasted brioche; fig notes, hint of flowers and plants.

Fine cuisine pairings

A fine dining Champagne. Try it with a Sunday roast, with grilled sea bass and summer vegetables, or with a creamy veal rib steak and mushrooms whose savoury depth meets the wine's vinosity.
