Making a Dosage Zéro asks for a double discipline, at the start and at the close. At the start, strict parcel selection and precise vinification. At the close, long lees ageing and the patient balancing of acidity with no sugar to correct it. The reserve wines raised in Foudres are the anchor: they bring the roundness that, in a Brut, the dosage would otherwise carry.

Zero Dosage. At Gardet we count on the reserve wines' roundness and cellar time to guarantee an optimal balance between the sharpness caused by the absence of sugar, and the smoothness from maturing a blend of carefully selected wines.

A reference for those who want Champagne without correction. With no dosage to soften the line, everything rests on parcel selection, the roundness of the reserve wines and long lees ageing. The result is precise, mineral, faithful to the grapes and the time given.

Nose
It is very delicate at first, white flowers and citrus, a breath of spice. Then, given a little patience, it grows richer, yellow stone fruit, a suggestion of brioche, a hint of vanilla. A nose that offers its depth without hurrying.
Taste
Bright, vivacious attack, direct and precise with no sugar to round it. Mid-palate on yellow stone fruit, then the vanilla and brioche of the long lees ageing. The finish turns mineral and saline, on pink grapefruit, with structure and real length.
Fine cuisine pairings
Scallop carpaccio with truffle shavings; crustaceans; lobster. Or simply with an old Parmesan or Comté cheese.
