Composition

Grapes & Origin
Pinot Noir, a third, the depth.
Pinot Meunier, a third, the fruit.
Chardonnay, a third, the light.

Three of Champagne's noblest sub-regions speak together here: the Montagne de Reims, the Vallée de la Marne, the Côte des Blancs, all three with Premier Cru standing.
Fermentations & Ageing
Alcoholic fermentation in stainless steel tanks, followed by malolactic fermentation.
+ Reserve wines (25%): raised for at least one year in Foudres, large Allier oak barrels.
+ Bottle ageing on the lees for about six years.
+ Minimum three months after disgorgement before shipping.

Production timeline
Our Brut Réserve is characterised by a specific ageing of the still wines and by the very long cellar time then attributed to those bottles.
Main harvest
Year's wines: a first blend only made out of wines from the last harvest is done. One part is used to compose 75% of Brut Réserve, the other part is sent for ageing in oak "Foudres".
Reserve wines
The last quarter is memory: the reserve wines. They rest a full year in our old Allier Foudres, barrels that carry 50 to 100 years of history, holding between 25 hL and 40 hL. In them come the depth, the complexity and that faintly oxidative poise only time can give. These 25% complete the final blend.

Shining honey yellow, with fine highlights
Nose
Pleasing first nose: strength and freshness together, yellow fruits led by apricot, then pastry and brioche from the lees ageing. Behind them, a hint of caramel and a touch of spice.
Taste
Smooth and lively. Aromas of ripe yellow fruits (apricot pie), toasted brioche; fig notes, hint of flowers and plants.

Fine cuisine pairings

A fine dining Champagne. Try it with a Sunday roast, with grilled sea bass and summer vegetables, or with a creamy veal rib steak and mushrooms whose savoury depth meets the wine's vinosity.
