The Demi-Sec is the dessert side of our Brut Tradition. Same three grapes, same score of villages, same three years of patience, but with a higher dosage that lets the wine speak softly when the macarons arrive.

Composition

Grapes & Origin
Pinot Noir, 45%, the directness that gives any sweetness a backbone.
Pinot Meunier, 45%, the warmth, the weight, the velvet hand.
Chardonnay, 10%, the line of light that opens the glass.

Some twenty Champagne villages, the same vines that carry our Brut Tradition. What changes is not the soil. What changes is the hand that adds the sweetness at the end.
Fermentations & Ageing
Like all our cuvées, it begins in stainless steel: alcoholic fermentation, then the malolactic that rounds the acidity.
+ Three years in the quiet of our cellars, on the lees, in the cool of the chalk.
+ And at least three months after disgorgement before it leaves the House, so the dosage has time to settle into the wine, like a guest who takes a seat before speaking.

Production timeline
This Demi-Sec is a non-vintage: the House's know-how consists in offering a constant style and quality by reaching the perfect balance between the year's wines and a collection of reserve wines kept for this purpose.
Main harvest
About 70% of the cuvée comes from the main harvest. It is the voice of the present vintage: the ripeness of the yellow fruit, the tension of the acidity, the character each summer writes into the vines.
Reserve wines
Reserve wines, about 30% of the blend. They are mainly from the 3 years preceding the base harvest, but some can be older.

Tasting
A cuvée for the sommelier and the pastry chef alike. The 36 g/L dosage gives the sweetness to carry a dessert, held in line by the acidity so the wine stays fresh rather than cloying.

Nose
With character, open. Aromas of ripe yellow fruits and toasted notes.
Taste
On the palate, an expressive, rounded start. Ripe yellow fruit, exotic touches of mango and passion fruit. The Meunier gives the velvet, the Pinot Noir the directness that carries the sweetness. Brioche, honey, a fine thread of acidity that keeps it all centred on the tongue, and a long, rounded finish.

Fine cuisine pairings

Made for dessert: macarons in every flavour, fruit tarts and tarte Tatin, crème brûlée. It also meets a prawn coco curry with grilled pineapple, and stands up to a blue cheese such as Roquefort.
