Creative cooking in Senlis, where the kitchen also serves
The house has made an unusual choice: there are no waiters. From chef Dylan Balossier to his wife Tina and second Benjamin, every member of the brigade also serves in the dining room. It is a way of staying in direct contact with guests, around a menu built on fresh produce and craft work.
