The Vintage
Weather Conditions

The autumn of 2007 was cool yet dry, following a relatively mild winter. Spring 2008 was mostly wet, with flowering occurring in early June under still cool temperatures. Grape ripening from mid-August to mid-September progressed smoothly.

Harvest

Start: At Gardet, from September 17 to October 6.
Conditions: Dry and cool weather (ideal).
Characteristics: Two remarkable parameters define the 2008 vintage: acidity and nitrogen levels, resulting in an abundant harvest.

Overall Assessment

The growing season was generally cool and unsettled, followed by a providential return of sunshine at harvest time.

Appearance
Golden yellow with golden highlights and a lively, joyful effervescence.
Nose
Initially discreet, revealing iodine and mineral notes, then opening up to white flowers, followed by expressive, spicy fruit aromas and subtle waxy notes.
Palate
Finesse and tension. A fresh, vibrant attack with pronounced citrus acidity and Granny Smith apple notes. The lemon-zest finish delivers a long, persistent aromatic expression.
Food Pairings

Spiny lobster tails, grilled John Dory, salt-baked sea bass, blue lobster, or scallops.

Also ideal as an aperitif for special occasions.
