The Selected Reserve cuvée is crafted from a high-quality blend designed to evolve very slowly over time. The wines first mature in large oak casks as part of a Perpetual Reserve, then continue aging in bottle.
Made from Allier oak, with capacities ranging from 25 to 40 hl and ages reaching 50 to 100 years. The blend is aged for at least 12 months within a Perpetual Reserve initiated in the 1990s, undergoing a very slow and controlled oxidation.
The maturation then continues in bottle for 7 to 9 years before disgorgement, allowing aromas to evolve towards richer, toasted notes.
