The Vintage
Weather conditions

The year 2016, particularly atypical, maintained its originality until the end of the growing season. An exceptionally wet and cool spring was followed by a very dry summer, culminating in a return to stable, sunny weather.

Harvest

Conditions : August brought warm, sunny days.
Characteristics : Excellent sanitary condition and outstanding ripeness.

Assessment

After an intense year, the ripening dynamics and the quality of the grapes offered the winemakers the opportunity to conclude the vintage with great satisfaction and excellent raw material.

Appearance
This champagne displays a delicate golden-yellow hue, enhanced by slightly silvery highlights, reflecting its youth and freshness.
Nose
The first nose, discreet and elegant, gradually reveals a complex and indulgent aromatic palette. Fruit aromas such as pear and redcurrant evolve towards pastry notes reminiscent of lemon tart and frangipane. A pronounced chalky minerality enriches the bouquet, finishing with hints of honey and hazelnut.
Palate
The attack is fresh and zesty, highlighting the vibrant character of this cuvée. The palate is taut and precise, echoing the mineral notes found on the nose. Pear aromas are confirmed, accompanied by a crisp Granny Smith apple note. The finish is long and persistent, marked by citrus zest and a subtle bitterness that adds elegance.
Food Pairings

A vintage Extra-Brut champagne defined by precision, balance and freshness, perfect with fish tartares, lightly seared scallops, or poultry served with chanterelle purée.
